How do you handle an interviewer asking you to solve something without any AI tools, cold?

Got caught off guard in a recent interview where AI tools were explicitly disallowed after months of interviews that allowed them. Realized my raw problem-solving speed had gotten rusty. Anyone else recalibrating prep for this?
